Chef Ricardo Tiago Takes On New Roles as Pastry Instructor at Mercan Training Academy and Corporate Pastry Chef at AHM

Recognized for his creativity, leadership skills, and contemporary vision of Portuguese pastry, Ricardo Tiago is taking on new professional roles, becoming Corporate Pastry Chef across all hotel units managed by AHM – Ace Hospitality Management in Portugal, as well as Pastry Instructor at the Mercan Training Academy, contributing to the implementation of pastry concepts, team coordination, and the establishment of standards of excellence across the group’s various units.

“It is with great satisfaction and pride that I embrace this new challenge in my professional career, which will allow me to share knowledge in the field of pastry with other teams and help them define or strengthen gastronomic concepts for various hotel units. This new phase also represents an even greater commitment and responsibility to continue growing and evolving within this universe, which, I believe, still has so much to offer,” says Chef Ricardo Tiago.

Originally from Maia, in the Porto district, Ricardo Tiago has been part of teams at renowned restaurants and hotels, including Michelin-starred projects, where he developed a distinctive approach that combines technique, creativity, and respect for the tradition of Portuguese pastry. Highlights of his professional career include positions as Pastry Chef at well-known establishments such as DOP Rui Paula, Casa de Chá da Boa Nova (two Michelin stars), Boeira Garden Hotel, Hilton Porto Gaia, The Largo, and Renaissance Porto Lapa Hotel.

He has been with AHM – Ace Hospitality Management for three years and has stood out for elevating national ingredients in balanced sensory experiences, creating signature desserts, and reinterpreting Lérias de Amarante, an icon of Portuguese convent pastry, which he brought into contemporary pastry through new combinations, flavors, and textures while preserving the identity of the original sweet.

He is also a regular presence at Portugal’s leading pastry festivals and events, further consolidating his position as a leading figure in the sector.
